Low-Glycemic Foods – Another Label on Food Items
The LA Times runs an excellent article about low glycemic foods and diets:
Add one more label to the list consumers are increasingly being asked to parse: This one declares food items as “low glycemic,” and refers to a food’s effects on blood sugar levels. Low-glycemic diets have become popular in England and Australia, based on studies that suggest they could help manage diabetes and prevent heart disease and obesity, and they’re now making headway here in the U.S.
What you need to know:
The diet, based on stabilizing blood sugar levels, may help diabetics but its effect on weight loss is harder to determine.

I’ve found some really good tasting recipes at http://www.lowglycemicrecipes.net They have breakfast, lunch, dinner and snacks. And they’re always adding new ones. They list carb amount, calories, fat, fiber content, Glycemic Index (GI), Glyco Load (GL). I haven’t seen any other sites that offer the GI and GL together in their recipes. Good site if you’re looking for new ideas and good info.

Egg in a Field
YIELD: Serves 3
Per portion:
GI: 4
GL: 1
Calories: 362; Carbohydrates: 6g; Protein: 24g; Fat: 6g; Saturated Fats: 2g; Sodium: 240mg.
INGREDIENTS:
• 1/2 pound 90% lean ground turkey
• 1/2 pound fresh spinach, rinsed, chopped, drained and placed on a serving platter
• 2 eggs, lightly beaten
• 1 onion, chopped
• 1 red bell pepper, chopped
• 2 T. Parmesan cheese, grated
• 1 T. extra virgin olive oil
• Tabasco Sauce to taste
• Sprig of fresh parsley
PREPARATION:
1. Heat oil in large nonstick skillet
2. Add the turkey, breaking into small bits with a fork.
3. Add onion and bell pepper.
4. Cook until redness is gone from turkey, about 10 minutes, stirring frequently.
5. Wisk Tabasco sauce into eggs and pour over turkey mixture.
6. Cover and cook over very low heat, until the eggs are set.
7. Transfer to the serving platter on top of spinach.
8. Sprinkle with Parmesan cheese and garnish with a sprig of fresh parsley.
9. Serve immediately.
