10 Things to Know on National Potato Chip Day

1. Potato Chips date back to 1853. An unhappy customer at a restaurant in Saratoga Springs, NY kept returning his fried potatoes to the chef, requesting they be prepared much thinner. The chef sliced them so thin that they could not be eaten with a fork, and thus was born the potato chip.

2. It wasn’t until the early 20th century that potato chips expanded from restaurant food and started selling in bags.

3. Flavored chips were born in the 1950’s by a small independent manufacturer who then sold the concept to the larger corporations.

4. As junk food goes, potato chips contain only 3 ingredients (potatoes, oil, salt) and are considered by some nutritionists the lesser of savory evils.

5. Potato chips were sold for over $15B (!!!) last year worldwide. They tally up about one third of all savory snacks.

6. While we call them potato chips, our overseas friends use the word crisps.

7. A single serving of potato chips, 1 ounce, contains only 150 calories, 10 grams of fat and 180mg of salt. That’s less than 10% of the daily calories of most people, about 15% of the fat, and 8% of the maximum sodium intake.

8. Problem is that most people don’t stop at one serving. Honestly, are 11 chips enough for you? People can wolf down 5 times that amount in sitting, dip not included…

9. One of the most popular flavored potato chip varieties is Sour Cream and Onion. Compared to just 3 ingredients in the original version, this one has 20 ingredients including MSG, Palm oil, and artificial colorings.

10. Just in case you were wondering, this national holiday does not appear in congressional records. It’s just another made up holiday by snack food industry marketing geniuses.

What to do at the supermarket:

Potato chips don’t have to be a daily ritual with your lunch sandwich. However, if you do buy them, choose potato chips that have been minimally processed -  Stay with the plain, unflavored chips as they have no additives and colorings. Buy single serve 1 oz. bags of chips so that you won’t be tempted to eat more than one serving at a time.

February is National Snack Food Month

It seems like the best and brightest MBA graduates go to work for marketing firms. In 1989, one of them came up with a great idea to increase snack sales in the ho-hum month of February. According to the Snack Food Association (SFA) the idea of the month long munch-fest was

to increase consumption and build awareness of snacks during a month when snack food consumption was traditionally low. The result has been a substantial increase in snack food sales during this month. The promotion kicks off on Super Bowl Sunday and publicity is generated throughout the month of February.

Twenty plus years later, you can’t argue with “success.” We’re a snackin’ nation, that’s for sure, with over $60 Billion in sales of snacks annually.

What you need to know:

The decline of family sit-down meals as well as a blurred line separating meals from snacks means that today it’s easier than ever to not even once during the day eat a meal. Whether it’s the breakfast bar you can chew on your commute or a bag of chips in your desk drawer, we’re always an arm’s reach away from a quick and easy hunger fix.

Riding on the health trend, marketers are now busy reformulating and re-messaging their products has healthy snack options. Whether it’s the 100-calorie snack genre, the “health hallowed” granola bar, or potato chips with only 3 natural ingredients, consumers are being convinced that the snacks they are consuming by  the billions are the best thing to happen in the world since sliced bread.

Now don’t get us wrong, snacking is fine, and can fill an important part of the day both nutritionally and socially (cookies and milk, anyone?), but we’ve really, really got to notice how often we snack, what we choose, and how it affects our mealtimes.

Especially with young children, where a less than ideal snack can fill up a small tummy instead of a much more balanced meal to be served an hour or two later.

What to do at the supermarket:

Get out of the snack aisles, and choose your snacks from surprising lanes in the supermarket. Fruits? Check. Veggies in a dip? Check. Bake your own cookies from scratch? Check.

“Health-Claim Jumping” at the Winter Fancy Food Show

This is a guest blog post by Carol Harvey, director of nutrition labeling at Palate Works. She recently visited the San Francisco Fancy Food Show.

For 35 years, the Fancy Food Show has been the trade show of all things tasty, gourmet and upscale. Many food products are launched there, including an increasing number dished up as “healthy” or “better for you,” due to evolving consumer demand.

In fact, the “top 5 food trends” for 2010 just announced by NASFT (the trade association that produces the show) include “good-for-you foods”. This “trend,” brewing for most of the 20 years that I have been attending the show, has proven a smart business move for a number of brands.

Whether any of the 100,000+ exhibited products really nailed the “taste + nutrition” prize was my focus again this year in San Francisco. And once again, how a company uses nutrition claims separated those that know their nutrition and labeling from those that don’t. Here are three examples. Read more…

A Visit to the Frito Lay Potato Chip Manufacturing Facility

Fooducate is participating in the annual Food & Nutriton Conference and Expo (FNCE) in Denver this year. We’ll be covering the show on the blog and on twitter, trying to bring interesting stories and attractions, along with a dash of opinion.

Today, as a pre-conference activity a group of dietitians and food professionals visited a local Frito-Lay manufacturing plant where we were given a tour and presentations about the company’s commitment to health and sustainability. We have to admit that healthy and ecology are not the first 2 things that come to mind when thinking about potato chips. That said, the PR team and plant staff did provide interesting information.

Here then, are a few observations:

1. A Dorito or Frito right hot off the machine is definitely tastier than what you get out of the bag a week or month later.

2. Seeing how a truckload of corn or potato is transformed in a matter of minutes to a bagged savory snack is quite remarkable. There’s a lot of engineering and quality control that goes into this process, regardless of the fact that the end product is not a picture of perfect nutrition.

3. Frito-Lay, owned by PepsiCo, has been and is continuing to lead in nutrition and sustainability, according to its press materials. Some examples include becoming a “net zero plant” by 2011. This means energy in equals energy out. This is achieved by reusing water, generating electricity through solar and other renewable means.

4. The nutrition improvements include – removal of bad fats in the 1980’s , then the removal of trans fats in the early 2000’s. Only 3 ingredients – potatoes, oil, salt. Relatively low amount of sodium – same as in a slice of bread.

5. When asked how much potato chips America consumed, the answer was 2-3 servings a week per person!

6. If that’s not enough, the dietitians working at Frito Lay said that as part of a balanced diet, there’s no problem in your children consuming a serving of potato chips every single day.

7. Baked chips, which have only 20% of the fat in the regualr chips account for only 7% of chip sales for Frito-Lay.

8. Potatoes sourced by Frito-Lay are of a specific variety with exactly the right shape, size, extra thin peel, and starchiness.

9. From truck to bag, it takes a potato just 12 minutes to go the route.

10. Damaged chips and corn products are not wasted, they get sold to local pig farmers. Wonder if all that Nacho seasoning does anything to the hogs…

11. The average potato chip serving is 1 oz. or 16 chips, according to the product label. When asked if this is in line with what people actually consume (we think people eat much more), the answer was that studies on this have not been carried out. The team was quick to point out the single serve bags, the portion control bags, and that for bags under 3 oz that may be consumed in a single sitting nutrition information is presented both per 1 oz serving and for the entire bag.

Summary – all in all, the visit opened our eyes to the ingenuity both in manufacturing and product formulation. We are happy that there are registered dietitians working at Frito-Lay helping to make the products less bad for us.

But at the end of the day we must still remember, these are just snacks. They are not meant to replace real food, nor should you look at them as a source of any substantial nutrients. And we definitely don’t think it’s fine to serve our kids potato chips 7 days a week. But then again, we don’t get our paycheck from Frito-Lay.

Fortified Junk Food

The hottest trend in the food industry lately is functional food. Although there is not formal definition for the term, its agreed that these are foods that can help reduce the risk of disease due to the presence of specific nutrients.

In general, the best functional foods are also the most unprocessed ones – fruits, vegetables and whole grains, as an example.

However, more and more processed foods are being fortified with nutrients in order to become “functional.” Manufacturers have realized that health sells, and usually commands a higher margin too.

And so we find calcium added to orange juice, vitamin C added to fruit snacks, and breakfast cereals fortified with pretty much the entire alphabet of minerals and vitamins.

OK. In the examples above, they’ve made decent products a bit healthier. But what can manufacturers do with products that at their core are not so healthy? Can a sugary / fatty / salty (take your pick) item  be miraculously transformed into something nutritious?

If we’re to judge by the sales of functional foods, sales are growing at a great clip, which means consumers have been convinced that the bag of cheese puffs fortified with omega-3 is really good for them.

An article in the Wall Street Journal recently tackled this topic:

Lillian Cheung, Ph.D, a nutrition professor at the Harvard School of Public Health, [...] points out that adding nutrients to a food can encourage people to perceive it as unequivocally healthy, whether it’s low-fat and fiber-rich oatmeal that’s been fortified or a similarly enhanced bag of potato chips packed with fat and bereft of any naturally occurring nutrients that the oatmeal has. “The fact that brands have gone to the trouble to add this stuff sends an implicit message that the finished product is desirable, and that’s just not always the case,” she says.

“Sports drinks are an example. The sugar they contain is so much worse than the added vitamins. But that information gets obscured.”

What you need to know:

The FDA does not recognize functional foods as a category. Which means it’s a wild west for marketers to sell us stories.

So if it’s too good to be true, it isn’t.

What to do at the supermarket:

Go for foods that are naturally functional. The less a food is processed, the most benefit you’ll reap. For example, get your omega-3 from fish, not a snack bar. If you’re still deficient in a certain nutrient, a fortified product is a good option, but only if at its base it is a nutritious product (non sugary cereals yes, soft drinks – NO).

Wishlist for the New FDA Boss

The FDA has served as a punching bag for this blog and other critics for a long time. In retrospect, deservedly so. Weakness in the face of the food industry, revolving doors of top personnel and corporate conglomerates, ineptness in preventing food contamination and handling the ensuing recalls, etc…

We’re hoping all this will change with new FDA Commissioner Margaret Hamburg starting her first full week in office today. Welcome Dr. Hamburg.

Here is a partial wish list of things we’d like to see fixed in the food regulation arena.

1. Revoke the GRAS (generally regarded as safe) status of harmful food additives such as artificial colorings, potassium bromate, and others.

2. Free packaged foods of “health claims“, which are actually marketing claims, by banning them altogether. A reminder to our readers, “health claims” are a concession that the US lawmaker gave to the powerful food industry lobby in the early 90’s when the Nutrition Education and Labeling Act was being negotiated. The result of that law is the nutrition label as we know it today.

3. Speaking of nutrition labels – please stop the practice of rounding down to zero. Manufacturers are legally allowed to claim a product has 0 trans fat even if a serving contains 0.49 grams. And since we all know people consume much more than the formal serving size, they can get much more than the 0 trans fat they were expecting.

4. Serving Size – Here are some ridiculous examples – 11 potato chips, 2 Oreo cookies. Come on, even 3 year olds eat more than that in a sitting. The reason serving sizes are so minute is to make them appear less caloric/fat/salty/sweet in the nutrition label. Please help manufacturers give us  accurate info.

5. How about a unified front of package label? These labels are supposed to be a quick glance way for a consumer to decide if a product is nutrtious enough ro not. With all the new formats sprouting like mad (NuVal, Smart Choices, Guiding Stars, etc..), consumers are more confused than ever. Why not adopt a system such as UK’s Traffic Lights? Yes, it irritates food manufacturers, but hey, you are supposed to protect us consumers.

6. We know you need Congress for this, but isn’t it ridiculous that the FDA can’t mandate a company to stop shipping tainted food? Today, all recalls are voluntary.

7. While we’re at it, ask Capitol Hill to allow prosecution of CEOs and processing plant managers who knowingly continue to ship poisoned products. Nothing like the fear of jail time to get folks thinking straight.

8. Back to food labels – it would be great to know how much sugar has been added to a product. The nutrition label states the amount of total sugar in a serving, but it does not indicate whether the sugar is added to the food or occurs naturally. Caloric-ly, there is no difference between table sugar and sugar found naturally in fruits and vegetables. But the benefit of fruits and vegetables is in the additional vitamins, minerals, fiber and phytochemicals they provide. Added sugars provide no health benefits. They are truly empty calories. Today, consumers can only guess how much sugar is added.

9. Lastly – Food safety is divided among too many government bodies, including the FDA, USDA, the Bureau of Alcohol, Tobacco, Firearms and Explosives, and others. At times there is overlap between the regulatory bodies, and sometimes the opposite. Wouldn’t it be smarter to have all food safety issues handles under one roof?

“Local” is the New Junkfood Buzzword [Frito Lay Potato Chips]

Ever since the term locavore was coined in 2005, there has been a lot of excitement around the prospect of people enjoying fresher, tastier foods, with less of an environmental impact because they travel less. We have come to appreciate farmers’ markets, contemplated food miles, and argued endlessly over what’s better: organic tomatoes or local tomatoes.

It was only a matter of time, then,  until the big food companies understood the potential of the term “local”. Once they caught on to the trend, they started using it in their own creative ways to market the same old products, but with a twist. A very enlightening article on this subject appeared in the New York Times:

Frito Lay is … kicking off a marketing campaign that is trying to position the nation’s best-selling brand of potato chips as local food.

Five different ads will highlight farmers who grow some of the two billion pounds of starchy chipping potatoes the Frito-Lay company uses each year. One is Steve Singleton, who tends 800 acres in Hastings, Fla.

“We grow potatoes in Florida, and Lays makes potato chips in Florida,” he says in the ad. “It’s a pretty good fit.”

What you need to know:

Organic junk food is still junk food, and similarly, the fact that a manufacturer calls it’s products local does not contribute to your health.

The real meaning behind the local food movement is to promote small farms, enable people to eat in an ecologically responsible manner. This means eating food in its season and not shipping it halfway around the world. It means minimizing waste in petroleum, used both for gasoline and fertilizer. It means keeping the soil healthy so it can continue to provide crops fro decades and centuries to come.

And it means less processed food. it means smaller artisan manufacturers. Which is exactly the opposite of the American way of doing business in the past 100 years (bigger is better, no?).

Watching huge food corporations jumping on this bandwagon is like listening to a bad joke. Don’t get us wrong, there is definitely room for a bag of potato chips and some Dunkin’ Donuts here and there. But please don’t BS us about local…

What to do at the supermarket:

If you want local food, farmer’s markets are usually a good place to go. Some of  Whole Foods Market’s fresh products also state where they were produced, in many cases not too far. But for the most part, a supermarket is the antithesis of local. It could never have grown to offer 40,00o items uniformly and regularly otherwise.

16 Ways to Improve Nutrition Labels

It’s been almost 20 years since the nutrition label as we know it was introduced. The intent was to empower consumers to make more informed (read: healthy) purchasing decisions. Unfortunately, the labels have not helped, as America continues to grow, and not in a good way.

While blaming the inadequacy of the nutrition panel is a naive approach to America’s relationship with its food, there are certain oversights or loopholes in the way packaged food information is provided to consumers today. For example, health claims or nutrient claims, which appear in large font on the front of package, embellish one positive trait, say “low-fat”. The nutritional cost may be a product high in sugar content as compensation. But such details appear in the side panel (the nutrition label is never up front), and consumers don’t always bother to check.

We’ve compiled a list of improvements that can make labels and packaging even more informative, hopefully providing consumers with  better tools to make a decision. Consumers will benefit from increased transparency of nutrition and ingredient information. Read more…

The Grocery Manufacturer’s Organization (GMA), an advocacy group representing food and beverage manufacturers, periodically publishes science policy papers as “a guide for consumers, policymakers, and the media”. In a recent publication entitled Sodium and Salt [download PDF], the GMA tackles a sensitive topic for consumers and manufacturers.

One of the interesting findings in this 22 page report, is a list of the top 20 individual food sources of sodium in our diets, based on the combination of frequency of consumption and sodium content itself:

3. Processed Cheese
4. Hot Dogs
