Five Great Snack Makeovers

We all love to snack. And we love convenience too. Unfortunately that comes with a price – unhealthy additives meant to preserve packaged pastry for months, artificial and cheap ingredients, and unreasonable amounts of sugar, sodium and fat.

I write about about healthy snacks made with real food.  Here are 5 of my junk food “makeovers”.  The idea is to eat something nutritious and delicious without breaking your wallet. You will have to invest a few minutes in the kitchen though…

1. Great tasting banana bread. Low in sugar and butter free. The key is that the bananas are sweet so you don’t have to add a lot of sugar to make it taste really great, and you use buttermilk which is a great low calorie substitute for butter.

2. Quick and healthy pizza. Here is a really simple suggestion to satisfy a pizza craving and it is an excellent snack size serving.

3. Homemade energy bars (less calories and no packaging). For the price of a bag of flour, oats, and raisins, you can have 24 bars for about the cost of 2 packaged energy bars. Is this savings worth your time? If you make $100 an hour, probably not, but the rest of us could use the money.

4. Homemade microwave popcorn – You CAN make popcorn in the microwave without the prepackaged products from the supermarket. All you need is popcorn, lunch bags, tape, and some flavorings.

5. Yogurt dip with much less fat – a yogurt and dill dip that is truly tasty and has very little calories. The secret is a substitute of the fat filled sour cream that goes into regular dip – Greek Yogurt. It has a thicker consistency than regular yogurt which makes it feel and taste more luxurious.

Why Fat-free Salad Dressings are Ridiculous [Inside the Label]

“A salad without the dressing is not a salad”, someone famous once said. Or should have said. A good dressing helps accentuate flavors, helps some of those greens go down easier, and as you’ll see in a minute improves the nutritional value of the salad.

If we’re to judge by the hundreds of varieties of dressings available at the supermarket, most shoppers agree. Salad dressings historically include some form of fat, such as olive oil or canola oil as a base. Even a mayonnaise base is actually a form of oil (mixed with raw eggs). In the past few years, many dressings have been re-formulated as fat-free, a means to tempt weight conscious consumers to continue buying them.

What you need to know:

A fat-free salad dressing is actually a bad nutritional decision. You see, a little bit of fat goes a long way in helping the body absorb the nutritional goodness of the salad. This is because some vitamins are fat-soluble. Vitamins A, D, E, and K (ADEK) are absorbed in the intestinal tract with the help of fat molecules. Which means that having a fat free salad dressing will actually decrease the nutrition effectiveness of your salad.

Good sources of vitamin A include carrots, broccoli, kale, and spinach. Vitamin E can be found in asparagus, avocado, eggs, nuts and seeds, and spinach. Vitamin K is present in parsley, cabbage, swiss chard, cauliflower, and brussels sprouts.

So what’s a non-fat dressing made from?

Mostly water. that’s right, you’re paying for water. Additionally, in order to maintain the semblance of an oil based dressing, emulsifiers and thickeners are added. Just look for example at the ingredient list for Kraft’s Fat-Free Italian Dressing:

Ingredients: WATER, VINEGAR, HIGH FRUCTOSE CORN SYRUP, CORN SYRUP, SALT, CONTAINS LESS THAN 2% OFPARMESAN CHEESE* (PART-SKIM MILK, CHEESE CULTURE, SALT, ENZYMES), GARLIC, ONION JUICE, WHEY, PHOSPHORIC ACID, XANTHAN GUM, POTASSIUM SORBATE AND CALCIUM DISODIUM EDTA AS PRESERVATIVES, YEAST EXTRACT, SPICE, RED BELL PEPPERS*, LEMON JUICE CONCENTRATE, GARLIC*, BUTTERMILK*, CARAMEL COLOR, SODIUM PHOSPHATE, ENZYMES, OLEORESIN PAPRIKA. *DRIED.

That’s quite a lengthy list for what should be a simple dressing. Some highlights:
High fructose corn syrup and corn syrup are the 3rd and 4th ingredients, used to round off the flavor of the highly acidic vinegar.

Phosphoric acid is used to add more acidic flavor, but why not add more lemon instead? (answer: it’s cheaper).

Calcium Disodium EDTA is a preservative with a mildly salty taste. It may cause kidney damage, and blood in urine. It’s on the FDA’s priority list for more health effects research.

Folks – this is ridiculous. Nobody in Italy dresses their salad like this. Nor should you. The 20 calories per serving of 2 tablespoon are to be commended, but a 50 or even 100 calorie dressing based on real ingredients such as olive oil, lemon juice and spices will probably serve you better both gastronomically and nutritionally.

What to do at the supermarket:

Here’s a great idea for you. Buy a bottle of good extra virgin olive oil. Also a few lemons.

At home, make your own dressing as follows: in a mixing bowl add equal parts olive oil and fresh squeezed lemon juice. Salt and pepper to taste. Pour over salad and toss just before serving. Forty five seconds tops.

If you’re more courageous, you can try adding any combination of a teaspoon of dijon mustard, a minced clove of garlic, and balsamic vinegar. Sometimes a teaspoon of honey or sugar can help take the acidic bite off, especially if the salad contains strong tasting greens such as arugula.

Prepare to be Confused: Horizon Organic Launches a Natural Product Line

Horizon Organic, the country’s largest organic milk products distributor, has recently announced a new line of “all natural” products. This is dismaying to many fans of the organic movement, because it would cause an erosion in revenue and profit to organic farmers.

You see, “Natural” is an undefined term, at least from a regualtory perspective. Which means products labeled “Natural” will enjoy the Horizon aura of health, but cost far less to manufacture, reaping a hefty profit to Horizon.

The first products are toddler yogurts, called Little Blends, and are expected to roll out later this month. Milk Breakers, a boxed vanilla / chocolate drink is slated for later this year.

According to Horizon, their natural products will be produced “without added hormones, artificial sweeteners, artificial colors, flavors, preservatives or high fructose corn syrup.” [source: LA Times]

What you need to know:

This is a great marketing move by Dean Foods, the mega dairy corporation that acquired Horizon back in 2003. In professional lingo this is called brand extension. You take the well known spotted cow logo of Horizon Organic and plaster it on new line of products.

What’s deceptive here, is that the new product line is NOT organic. The amorphous “all natural” claim is not defined by the FDA or USDA, although a  an FDA spokeswoman said “the agency does not object to using the term on food labels ‘in a manner that is truthful and not misleading’ and if the product has no added color, artificial flavors, or synthetic substances.”

But this is too open ended. For example, High Fructose Corn Syrup is considered by some manufacturers as a natural product, because it is made from corn.

“All natural” foods are one of the fastest growing product categories in the US in the past year. It’s no wonder all the big manufacturers are jumping on board. It’s great for sales, because it lets consumers feel good about their choice, even with no real backing.

At the end of the day, this move will deteriorate even further consumer perception of differences between organic and natural food. This ultimately hurts organic farmers, who are already struggling in a tough economy.

Horizon has previously been called out for production practices claimed to be out of line with organic principles. It seems that the bigger you grow as a company, the harder it is to adhere to your original beliefs and principles.

And don’t get us started on toddler yogurts. What’s the problem with junior enjoying a regular yogurt? Is it caffeinated? Does it have alcoholic content? But that’s the subject for another post.

What to do at the supermarket:

Don’t get duped by “Natural” labels. They do not necessarily mean the product is healthy for you. If you want no growth hormones, antibiotics, and free pastured cows, you’ll have to cough up the cash to pay for the more expensive organic products.

And if you are buying conventional, look beyond the front of package marketing hype and read the nutrition panel carefully. Look at daily values for nutrients and examine the ingredient list.  A high amount of fat and sugar in a product may count as natural, but they definitely do not make it a healthy food.

Starbucks Dumps High Fructose Corn Syrup

Starbucks will remove HFCS from all its baked goods starting June 30, according to the company. The coffee shop chain is making another attempt to grow its food business, which now stands at less than 20% of revenue. According to Starbucks:

The new campaign — which will be promoted with the tag “Real Food. Simply Delicious” – follows last year’s health and wellness push that added food like oatmeal, smoothies and a protein plate to Starbucks’ repertoire.

The ingredient changes, which also include removing preservatives where possible, will affect about 90 percent of the baked goods Starbucks sells and are part of the coffee chain’s ongoing efforts to appeal to increasingly health-conscious consumers as recession has damped spending on little luxuries like lattes.

What you need to know:

Cane sugar contains just as many calories per gram as HFCS, so don’t go on a brownie binge just yet. We are happy to see that Starbucks is removing preservatives and food colorings, and in general is looking to provide a healthy menu.

Now if they could also charge healthier prices for their coffee…

Inside the Label: Ranch Dressing

We wrote about the huge US salad dressing industry in a previous post. Today we’ll look inside the label of one of the most popular – Hidden Valley The Original Ranch.

This dressing comes with some history. In the late 50’s, Steve and Gayle Henson would host guests at their dude ranch in southern California. They concocted a special salad dressing that was served to the guests, and the rest is history. Hidden Valley is now a ranch dressing empire. it is owned by Clorox (!?) of cleaning detergent fame.

Inside the Label: Matt’s Munchies Fruit Leathers

We recently covered freeze dried fruit snacks, and today we’ll take a look at leather snacks. Chef Roberts, operating in the New York metropolitan area, has recently launched a line of fruit leather. From the Chef’s marketing department:

Matt’s Munchies are all-natural fruit leathers free of gluten, nuts, eggs and dairy products. There are 6 palate-pleasing flavors with no artificial coloring or preservatives. Great for vegans and those concerned with food allergies. All flavors are less then 100 calories per one ounce serving with no added sugar, oils or salts. They make for a super convenient, tasty nutrition-perfect snack on the go, a tasty companion to a glass of wine, or a healthy dessert after dinner.

The six flavors are divided into 2 categories:

Banana based – Choco-Nana, Apple Pie, and plain old Banana
Mango based – Island Mango, Ginger Zest, and plain Mango

How Healthy is ConAgra’s Healthy Choice?

Very healthy! Or at least that’s what new research, sponsored by ConAgra, has shown. Here’s the press release:

ConAgra Foods announced today new research that shows people who ate Healthy Choice(R) really did get healthier. Participants in the 24-week study, on average, lost 18 pounds – all as fat – trimmed their waistlines by about three inches, and lowered their cholesterol by 12 points. Leading cardiologist Dr. James Rippe, founder and director of the Rippe Lifestyle Institute, led the research team that conducted the study, which was presented during the 2009 Experimental Biology Conference April 18-22 in New Orleans, La.

Excuse us while we scratch our heads. How can The Rippe Institute conduct a truly objective study when it is being heftily paid by a company with a vested interest in a specific outcome?

Reading into the study, the people eating Helthy Choice got healthier because they were forced to excercise, eat only fruits, vegetables, lean meat and dairy, and whole grains. Oh, and one Healthy Choice meal once a day. How can the weight loss be attributed specifically to the frozen meal?

This press release is part of a huge rebranding of the Healthy Choice empire, including the introduction of new products, reformulation of some existing lines, and new packaging. ConAgra is estimated to be spending close to $100 million on this effort, including National TV Ads starring Julia Louis-Dreyfus and web activities.

What you need to know:

While frozen dinners have made some headway over the past few years in terms of nutritional content, they still lag far behind home made food on several fronts:

1. high levels of salt – in the clip above, Julia Louis Dreyfus is stuffing herself silly with Sweet Asian Potstickers containing 600mg of sodium. That’s a quarter of the daily maximum value.

2. high levels of sugar – 19 grams or 4 teaspoonfuls. Hey, is this dessert?

3. too many ingredients* – here’s what’s inside the Sweet Asian Potstickers:

Vegetable Potstickers: (Filling [Cabbage, Vermicelli {Mung Bean, Water}, Baked Tofu (Tofu [Water, Whole Soybeans, Nigari], Tamari [Water, Soybeans, Salt, Alcohol, Wheat], Natural Flavors, Spices), Bulgur Wheat, Precooked Rice, Water Chestnuts, Green Beans, Onions, Carrots, Soy Sauce (Water, Wheat, Soybeans, Salt), Sesame Oil, Evaporated Cane Juice, Salt, Xanthan Gum, Spice], Wrapper [Wheat Flour, Water, Corn Starch, Soybean and/or Canola Oil]). Cooked Whole Grain Brown Rice, Water, Sugar, Carrots, Red Peppers, Sake, Rice Vinegar, Scallions, Corn Starch, Wheat, Soybeans, Spices, Sesame Oil, Garlic Puree, Salt, Locust Gum

To be fair, most of the list above is actually understandable, and there are no freaky additives or preservatives in this dish. So when the food scientists want to, they can dish out healthy fare…

* We could not find the ingredient information on the Healthy Choice website. The customer support group did reply promptly to our email, though.

What to do at the supermarket:

If you really really can’t prepare your own food, and must grab something from the Frozen Dinner Aisle, take a look at health brands such as Healthy Choice and Lean Cuisine first. The brand does not automatically promise you’ll get a nutritious dish, but it improves the chances.

Proceed to check the ingredient list, scanning for unpronounceable chemicals, and then look at the sodium count. It should be in the neighborhood of  400-500mg or less. The sugar count should be lower than 12 grams. Usually the calorie count will be decent, because manufacturers know that’s the only number most people look at.
